Chicken Stroganoff

Tender chicken in a rich, creamy sour cream sauce served over egg noodles for ultimate comfort food.

Ingredients

  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 4 tbsp butter
  • 8 oz mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 12 oz egg noodles
  • to taste salt and black pepper

Directions

  1. 1Cook egg noodles according to package directions; drain and set aside.
  2. 2Season chicken pieces with salt and pepper. Heat 2 tbsp butter in a large skillet over medium-high heat and cook chicken until golden, about 5-7 minutes. Remove and set aside.
  3. 3In the same skillet, add remaining 2 tbsp butter, then sauté mushrooms and onion until softened, about 4 minutes. Add garlic and cook for 1 minute.
  4. 4Sprinkle flour over the vegetables, stir well, and cook for 1 minute until fragrant.
  5. 5Pour in chicken broth, scraping up any browned bits from the bottom. Simmer for 2 minutes until slightly thickened.
  6. 6Return chicken to the skillet, reduce heat to low, and stir in sour cream and Dijon mustard until fully combined. Simmer for 3-4 minutes without boiling.
  7. 7Serve chicken stroganoff over cooked egg noodles and garnish with fresh parsley if desired.
