Chicken Teriyaki

Tender chicken glazed in a sweet and savory teriyaki sauce, served over steamed rice.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sugar
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 2 tbsp water
  • 2 green onions, sliced
  • 1 tsp sesame seeds

Directions

  1. 1Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. 2Heat oil in a large skillet over medium-high heat and cook chicken until golden brown on all sides, about 8 minutes. Remove and set aside.
  3. 3In a small bowl, whisk together soy sauce, mirin, sugar, rice vinegar, garlic, ginger, cornstarch, and water.
  4. 4Pour the teriyaki sauce into the skillet and bring to a simmer, stirring constantly for 2 minutes until thickened.
  5. 5Return chicken to the skillet and coat thoroughly with sauce, cooking for another 2-3 minutes until heated through.
  6. 6Transfer to a serving plate, garnish with green onions and sesame seeds, and serve immediately over steamed rice.
