Chicken Teriyaki Rice Bowl

Ingredients
- •1 cup short-grain white rice
- •1.5 cups water
- •1 lb boneless chicken thighs, cubed
- •1/4 cup soy sauce
- •2 tablespoons mirin
- •1 tablespoon sugar
- •2 cloves garlic, minced
- •1 teaspoon ginger, minced
- •2 cups broccoli florets
- •2 teaspoons cornstarch
- •2 tablespoons vegetable oil
- •1 green onion, sliced
Directions
- 1Rinse rice and cook with water in a rice cooker or pot until tender, about 15 minutes.
- 2While rice cooks, mix soy sauce, mirin, sugar, and cornstarch in a small bowl.
- 3Heat oil in a large skillet over medium-high heat and sauté garlic and ginger for 30 seconds.
- 4Add chicken and cook until golden, about 6-7 minutes.
- 5Pour teriyaki sauce over chicken and add broccoli, simmer for 3-4 minutes until sauce thickens and broccoli is tender.
- 6Divide cooked rice between bowls, top with chicken and vegetables, garnish with green onions, and serve immediately.
