Ingredients

  • 1 cup short-grain white rice
  • 1.5 cups water
  • 1 lb boneless chicken thighs, cubed
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 cups broccoli florets
  • 2 teaspoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 green onion, sliced

Directions

  1. 1Rinse rice and cook with water in a rice cooker or pot until tender, about 15 minutes.
  2. 2While rice cooks, mix soy sauce, mirin, sugar, and cornstarch in a small bowl.
  3. 3Heat oil in a large skillet over medium-high heat and sauté garlic and ginger for 30 seconds.
  4. 4Add chicken and cook until golden, about 6-7 minutes.
  5. 5Pour teriyaki sauce over chicken and add broccoli, simmer for 3-4 minutes until sauce thickens and broccoli is tender.
  6. 6Divide cooked rice between bowls, top with chicken and vegetables, garnish with green onions, and serve immediately.
