Chicken with Herb Sauce and Steamed Vegetables

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 4 cups fresh broccoli florets
  • 3 cups sliced carrots
  • to taste salt and black pepper

Directions

  1. 1Season chicken breasts with salt and pepper on both sides.
  2. 2Heat olive oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes per side until golden brown and cooked through; transfer to a plate.
  3. 3In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
  4. 4Add chicken broth, lemon juice, thyme, and parsley to the skillet; simmer for 2-3 minutes to create the herb sauce.
  5. 5While the sauce cooks, steam broccoli and carrots in a pot with 1 inch of water for 5-7 minutes until tender-crisp.
  6. 6Return chicken to the skillet to coat with herb sauce, then plate alongside steamed vegetables and drizzle with sauce.
