Chicken with Herb Sauce and Steamed Vegetables

Ingredients
- •4 boneless, skinless chicken breasts
- •2 tablespoons olive oil
- •4 tablespoons butter
- •3 cloves garlic, minced
- •1/2 cup chicken broth
- •2 tablespoons fresh lemon juice
- •2 tablespoons fresh parsley, chopped
- •1 teaspoon dried thyme
- •4 cups fresh broccoli florets
- •3 cups sliced carrots
- •to taste salt and black pepper
Directions
- 1Season chicken breasts with salt and pepper on both sides.
- 2Heat olive oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes per side until golden brown and cooked through; transfer to a plate.
- 3In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
- 4Add chicken broth, lemon juice, thyme, and parsley to the skillet; simmer for 2-3 minutes to create the herb sauce.
- 5While the sauce cooks, steam broccoli and carrots in a pot with 1 inch of water for 5-7 minutes until tender-crisp.
- 6Return chicken to the skillet to coat with herb sauce, then plate alongside steamed vegetables and drizzle with sauce.
