Chickpea and Vegetable Curry
A fragrant and warming North African curry loaded with tender chickpeas and vegetables in a rich tomato-spiced sauce.

- •2 tablespoons olive oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •1 tablespoon ground cumin
- •1 tablespoon ground coriander
- •1 teaspoon paprika
- •1/2 teaspoon cayenne pepper
- •1 can (14 oz) diced tomatoes
- •1 can (15 oz) chickpeas, drained and rinsed
- •2 cups diced zucchini and bell peppers
- •1 cup vegetable broth
- •1 teaspoon salt
Directions
- 1Heat olive oil in a large pot over medium heat. Add diced onion and cook for 5 minutes until softened.
- 2Stir in minced garlic and cook for 1 minute until fragrant.
- 3Add cumin, coriander, paprika, and cayenne pepper. Cook for 1 minute, stirring constantly to bloom the spices.
- 4Pour in the diced tomatoes and vegetable broth. Bring to a simmer.
- 5Add chickpeas and diced zucchini and bell peppers. Season with salt and stir well.
- 6Simmer uncovered for 15-20 minutes until vegetables are tender and flavors are well combined.
- 7Taste and adjust seasonings as needed. Serve hot over rice or with warm pita bread.
