Chifles (Ecuadorian Plantain Chips)

Ecuadorian green plantain chips fried thin and crisp, then seasoned simply with salt and a squeeze of lime.

Ingredients

  • 3 green plantains
  • 4 cups vegetable oil for frying
  • 1 tsp salt
  • 1 tbsp fresh lime juice

Directions

  1. 1Peel the green plantains and slice them lengthwise into very thin strips.
  2. 2Heat vegetable oil to 350°F (175°C) in a deep pot.
  3. 3Fry the plantain strips in small batches for 2–3 minutes until crisp.
  4. 4Drain the chifles on paper towel.
  5. 5Season immediately with salt while the chips are still hot.
  6. 6Finish with a light squeeze of lime just before serving.
