Chifles (Ecuadorian Plantain Chips)
Ecuadorian green plantain chips fried thin and crisp, then seasoned simply with salt and a squeeze of lime.

Ingredients
- •3 green plantains
- •4 cups vegetable oil for frying
- •1 tsp salt
- •1 tbsp fresh lime juice
Directions
- 1Peel the green plantains and slice them lengthwise into very thin strips.
- 2Heat vegetable oil to 350°F (175°C) in a deep pot.
- 3Fry the plantain strips in small batches for 2–3 minutes until crisp.
- 4Drain the chifles on paper towel.
- 5Season immediately with salt while the chips are still hot.
- 6Finish with a light squeeze of lime just before serving.
