Chiles Guajillo Rellenos

Ingredients

  • 8 dried guajillo chiles
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1 pound ground beef or shredded chicken
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 cup chicken or beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste salt and pepper

Directions

  1. 1Toast the dried guajillo chiles in a dry skillet for 2 minutes, then soak in hot water for 15 minutes until softened.
  2. 2Heat olive oil in a large skillet and sauté the onion and garlic until fragrant, then add the ground meat and cook until browned.
  3. 3Blend the softened guajillo chiles with 1 cup of their soaking liquid and the tomato sauce until smooth, then strain through a fine sieve.
  4. 4Make a careful slit down the side of each chile and remove the seeds and stem, then stuff each chile with the cooked meat mixture and cheese.
  5. 5Pour the chile sauce into a baking dish and arrange the stuffed chiles seam-side down, then pour the broth over them.
  6. 6Cover with foil and bake at 350°F for 20 minutes until heated through.
  7. 7Serve hot, garnished with fresh onion slices and additional cheese if desired.
