Chiles Guajillo Rellenos
Roasted guajillo peppers stuffed with savory cheese and meat, bathed in a rich tomato sauce.

Ingredients
- •8 dried guajillo chiles
- •2 cups shredded Oaxaca or mozzarella cheese
- •1 pound ground beef or shredded chicken
- •1 medium white onion, diced
- •3 cloves garlic, minced
- •2 cups tomato sauce
- •1 cup chicken or beef broth
- •2 tablespoons olive oil
- •1 teaspoon cumin
- •to taste salt and pepper
Directions
- 1Toast the dried guajillo chiles in a dry skillet for 2 minutes, then soak in hot water for 15 minutes until softened.
- 2Heat olive oil in a large skillet and sauté the onion and garlic until fragrant, then add the ground meat and cook until browned.
- 3Blend the softened guajillo chiles with 1 cup of their soaking liquid and the tomato sauce until smooth, then strain through a fine sieve.
- 4Make a careful slit down the side of each chile and remove the seeds and stem, then stuff each chile with the cooked meat mixture and cheese.
- 5Pour the chile sauce into a baking dish and arrange the stuffed chiles seam-side down, then pour the broth over them.
- 6Cover with foil and bake at 350°F for 20 minutes until heated through.
- 7Serve hot, garnished with fresh onion slices and additional cheese if desired.
