Chili Cheese Fries

Ingredients

  • 2 lbs russet potatoes
  • 2 tablespoons vegetable oil
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cans (15 oz each) kidney beans, drained
  • 2 cans (15 oz each) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese
  • 2 tablespoons sour cream

Directions

  1. 1Cut potatoes into fries, soak in cold water for 15 minutes, pat dry, and fry in 350°F oil until golden (about 15 minutes), then season with salt.
  2. 2Brown ground beef with diced onion in a large pot over medium-high heat, breaking it into small pieces.
  3. 3Add kidney beans, tomato sauce, chili powder, cumin, and salt to the pot, stir well, and simmer for 10 minutes until thickened.
  4. 4Place hot fries on a plate or platter, pour chili over the top, and sprinkle generously with shredded cheddar cheese.
  5. 5Top with sour cream and serve immediately while hot.
