Chilled Sesame Noodles

Ingredients
- •1 pound fresh or dried Chinese egg noodles
- •1/2 cup sesame paste or tahini
- •3 tablespoons soy sauce
- •2 tablespoons rice vinegar
- •1 tablespoon sesame oil
- •2 teaspoons chili oil or sriracha
- •2 cloves garlic, minced
- •1 tablespoon sugar
- •2 cups cucumber, julienned
- •2 green onions, sliced
- •3 tablespoons roasted peanuts, crushed
- •1 teaspoon water or chicken broth
Directions
- 1Cook noodles according to package directions, then drain and rinse with cold water until completely cooled.
- 2Whisk together sesame paste, soy sauce, rice vinegar, sesame oil, chili oil, garlic, and sugar in a large bowl until smooth, adding water if needed to reach pourable consistency.
- 3Add cooled noodles to the sauce and toss until well coated.
- 4Divide noodles among serving bowls and top with julienned cucumber, green onions, and crushed peanuts.
- 5Chill for at least 10 minutes before serving, or refrigerate up to 4 hours.
