Ingredients

  • •2 cups shredded cooked chicken
  • •1 can (15 oz) refried beans
  • •1.5 cups shredded cheddar cheese
  • •1 teaspoon cumin
  • •1 teaspoon chili powder
  • •1/2 teaspoon garlic powder
  • •1/2 cup salsa
  • •8 flour tortillas (10-inch)
  • •3 cups vegetable oil for frying
  • •1/2 cup sour cream

Directions

  1. 1Mix shredded chicken, refried beans, cheese, cumin, chili powder, garlic powder, and salsa in a bowl.
  2. 2Warm flour tortillas slightly to make them pliable.
  3. 3Spoon about 3/4 cup filling onto each tortilla, fold in the sides, then roll tightly into a burrito shape.
  4. 4Heat oil in a deep skillet to 350°F (175°C).
  5. 5Carefully place chimichangas seam-side down into hot oil and fry for 2-3 minutes per side until golden brown and crispy.
  6. 6Remove with a slotted spoon and drain on paper towels.
  7. 7Serve hot topped with sour cream, salsa, cheese, and lettuce if desired.

💡 Seal chimichangas with the tortilla seam underneath before frying; a loose seam opens quickly in hot oil and releases cheese into the pan.
