Chimichurri Steak

Tender, juicy grilled steak coated with a vibrant herby chimichurri sauce that's bursting with garlic, vinegar, and fresh parsley.

Ingredients

  • 2 lbs ribeye or strip steak
  • 1 cup fresh parsley, chopped
  • 1/4 cup fresh oregano, chopped
  • 6 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Combine parsley, oregano, garlic, olive oil, red wine vinegar, red pepper flakes, salt, and black pepper in a bowl to make the chimichurri sauce.
  2. 2Remove steak from refrigerator 20 minutes before cooking and season generously with salt and pepper.
  3. 3Heat a grill or cast-iron skillet over high heat until very hot.
  4. 4Cook steaks 4-5 minutes per side for medium-rare, or until desired doneness is reached.
  5. 5Transfer steaks to a cutting board and let rest for 5 minutes.
  6. 6Pour half the chimichurri sauce over the steaks and serve the remaining sauce on the side for drizzling.
