Chinese Lemon Chicken

Ingredients
- •1.5 lbs chicken breast, cut into bite-sized pieces
- •1/4 cup cornstarch
- •1/4 cup all-purpose flour
- •1 teaspoon salt
- •1/2 teaspoon white pepper
- •2 cups vegetable oil for frying
- •1/2 cup fresh lemon juice
- •1/3 cup sugar
- •2 tablespoons water
- •2 cloves garlic, minced
- •2 teaspoons cornstarch mixed with 2 tablespoons water
- •2 tablespoons vegetable oil
- •1 lemon, thinly sliced for garnish
Directions
- 1Mix cornstarch, flour, salt, and white pepper in a bowl. Coat chicken pieces with the mixture.
- 2Heat 2 cups oil in a wok or deep pan to 350°F. Fry chicken in batches until golden and cooked through, about 5-7 minutes per batch. Drain on paper towels.
- 3In a small saucepan, combine lemon juice, sugar, and water. Bring to a simmer over medium heat, stirring until sugar dissolves.
- 4Add minced garlic to the lemon sauce and cook for 1 minute until fragrant.
- 5Stir in the cornstarch slurry and simmer for 1-2 minutes until the sauce thickens and becomes glossy.
- 6Heat 2 tablespoons oil in a wok over high heat. Add fried chicken and pour the lemon sauce over it, tossing quickly to coat evenly.
- 7Transfer to a serving plate and garnish with lemon slices and optional green onions. Serve immediately over steamed rice.
