Chinese Tea Eggs

Chinese hard-boiled eggs cracked and simmered in black tea, soy sauce, star anise, cinnamon, and ginger until marbled and savoury.

Ingredients

  • 8 eggs
  • 3 black tea bags
  • 1/2 cup soy sauce
  • 4 cups water
  • 3 whole star anise
  • 1 cinnamon stick
  • 1 tbsp fresh ginger, sliced
  • 1 tbsp granulated sugar

Directions

  1. 1Boil the eggs for 8 minutes, then cool them in cold water.
  2. 2Tap each shell all over with a spoon to create fine cracks without peeling.
  3. 3Combine tea, soy sauce, water, star anise, cinnamon, ginger, and sugar in a saucepan.
  4. 4Add the cracked eggs and simmer gently for 15 minutes.
  5. 5Cool the eggs in the tea mixture and refrigerate them in the liquid for 8 hours.
  6. 6Peel the marbled eggs and serve chilled or at room temperature.

💡 The more evenly you crack the shell, the finer and more dramatic the marbled tea pattern becomes.
