Chinese Tea Eggs
Chinese hard-boiled eggs cracked and simmered in black tea, soy sauce, star anise, cinnamon, and ginger until marbled and savoury.

Ingredients
- •8 eggs
- •3 black tea bags
- •1/2 cup soy sauce
- •4 cups water
- •3 whole star anise
- •1 cinnamon stick
- •1 tbsp fresh ginger, sliced
- •1 tbsp granulated sugar
Directions
- 1Boil the eggs for 8 minutes, then cool them in cold water.
- 2Tap each shell all over with a spoon to create fine cracks without peeling.
- 3Combine tea, soy sauce, water, star anise, cinnamon, ginger, and sugar in a saucepan.
- 4Add the cracked eggs and simmer gently for 15 minutes.
- 5Cool the eggs in the tea mixture and refrigerate them in the liquid for 8 hours.
- 6Peel the marbled eggs and serve chilled or at room temperature.
