Chocolate Croissant

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 3/4 cup whole milk
  • 1 cup cold butter
  • 4 ounces dark chocolate bars
  • 1 egg
  • 1 tablespoon water

Directions

  1. 1Mix flour, salt, sugar, and yeast in a bowl. Warm milk to 110°F and stir into dry ingredients until a shaggy dough forms. Chill for 30 minutes.
  2. 2Flatten cold butter between parchment paper and create a 6x8 inch rectangle. Place on dough and fold to encase butter. Roll out to 8x16 inches, fold into thirds, wrap, and refrigerate 45 minutes.
  3. 3Repeat the roll-fold-chill process two more times, rotating the dough 90 degrees each time, with 45 minutes of chilling between each turn.
  4. 4Roll final dough to 1/8-inch thickness and cut into 4x4 inch squares. Place a chocolate bar piece on each square, roll up tightly, and place seam-side down on parchment paper.
  5. 5Cover croissants and let rise at room temperature for 90 minutes until puffy.
  6. 6Preheat oven to 400°F. Mix egg with water for egg wash and brush over croissants.
  7. 7Bake for 18-20 minutes until golden brown. Cool on wire rack for 10 minutes before serving.
