Chocolate Flan

Ingredients

  • 1 cup sugar
  • 6 oz semi-sweet chocolate, chopped
  • 1 cup whole milk
  • 1 cup heavy cream
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. 1Preheat oven to 325°F. In a small saucepan, melt 1/2 cup sugar over medium heat, stirring occasionally until golden caramel forms. Quickly pour caramel into a flan dish, coating the bottom and sides.
  2. 2Heat milk and cream together in a saucepan until steaming. Remove from heat and stir in chopped chocolate until completely melted and smooth.
  3. 3In a bowl, whisk together eggs, remaining 1/2 cup sugar, vanilla extract, and salt until well combined.
  4. 4Slowly pour the chocolate mixture into the egg mixture while whisking constantly to temper the eggs.
  5. 5Strain the chocolate custard through a fine-mesh sieve into the caramel-lined flan dish.
  6. 6Place the flan dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the flan dish.
  7. 7Bake for 35-40 minutes until the custard is set but slightly jiggly in the center. Cool completely, then refrigerate for at least 4 hours.
  8. 8Run a thin knife around the edges and invert onto a serving plate, letting the caramel drip over the chocolate flan.
