Chocolate Flan

Ingredients
- •1 cup sugar
- •6 oz semi-sweet chocolate, chopped
- •1 cup whole milk
- •1 cup heavy cream
- •5 large eggs
- •1 teaspoon vanilla extract
- •1/4 teaspoon salt
Directions
- 1Preheat oven to 325°F. In a small saucepan, melt 1/2 cup sugar over medium heat, stirring occasionally until golden caramel forms. Quickly pour caramel into a flan dish, coating the bottom and sides.
- 2Heat milk and cream together in a saucepan until steaming. Remove from heat and stir in chopped chocolate until completely melted and smooth.
- 3In a bowl, whisk together eggs, remaining 1/2 cup sugar, vanilla extract, and salt until well combined.
- 4Slowly pour the chocolate mixture into the egg mixture while whisking constantly to temper the eggs.
- 5Strain the chocolate custard through a fine-mesh sieve into the caramel-lined flan dish.
- 6Place the flan dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the flan dish.
- 7Bake for 35-40 minutes until the custard is set but slightly jiggly in the center. Cool completely, then refrigerate for at least 4 hours.
- 8Run a thin knife around the edges and invert onto a serving plate, letting the caramel drip over the chocolate flan.
