Ingredients

  • 2 cups all-purpose flour
  • 1¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup strong brewed coffee
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 1 cup unsalted butter
  • 2⅔ cups powdered sugar

Directions

  1. 1Preheat oven to 350°F and grease two 9-inch round cake pans. Mix flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
  2. 2Whisk eggs, coffee, oil, vanilla, and milk together in another bowl, then pour into dry ingredients and stir until smooth.
  3. 3Divide batter evenly between pans and bake for 30-35 minutes until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  4. 4Beat softened butter until creamy, then gradually add powdered sugar and cocoa powder. Beat until light and fluffy, adding milk as needed for consistency.
  5. 5Place one cake layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides of the cake. Refrigerate for 15 minutes before serving.
