Chocolate Layer Cake

Ingredients
- •2 cups all-purpose flour
- •1¾ cups granulated sugar
- •¾ cup unsweetened cocoa powder
- •2 teaspoons baking soda
- •½ teaspoon salt
- •2 large eggs
- •1 cup strong brewed coffee
- •½ cup vegetable oil
- •1 teaspoon vanilla extract
- •½ cup whole milk
- •1 cup unsalted butter
- •2⅔ cups powdered sugar
Directions
- 1Preheat oven to 350°F and grease two 9-inch round cake pans. Mix flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
- 2Whisk eggs, coffee, oil, vanilla, and milk together in another bowl, then pour into dry ingredients and stir until smooth.
- 3Divide batter evenly between pans and bake for 30-35 minutes until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
- 4Beat softened butter until creamy, then gradually add powdered sugar and cocoa powder. Beat until light and fluffy, adding milk as needed for consistency.
- 5Place one cake layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides of the cake. Refrigerate for 15 minutes before serving.
