Ingredients

  • 1 (9-inch) unbaked pie crust
  • 2/3 cup unsweetened cocoa powder
  • 1 1/3 cups sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 6 tablespoons sugar

Directions

  1. 1Preheat oven to 350°F. Bake the pie crust for 10 minutes until lightly golden, then remove and let cool slightly.
  2. 2Combine cocoa powder, 1 1/3 cups sugar, cornstarch, and salt in a saucepan. Gradually whisk in milk until smooth, then cook over medium heat, stirring constantly, until thickened (about 8 minutes).
  3. 3Remove from heat and quickly whisk in egg yolks one at a time, then stir in butter and vanilla extract until combined.
  4. 4Pour the chocolate filling into the prepared pie crust.
  5. 5Beat egg whites with an electric mixer until soft peaks form, then gradually add 6 tablespoons sugar while beating until stiff, glossy peaks form.
  6. 6Spread or pipe meringue over the hot chocolate filling, sealing the edges to the crust.
  7. 7Bake for 10-12 minutes until the meringue is golden brown, then cool on a wire rack for 1 hour before serving.
