Chocolate Meringue Pie

- •3 large egg whites
- •6 tablespoons sugar
Directions
- 1Preheat oven to 350°F. Bake the pie crust for 10 minutes until lightly golden, then remove and let cool slightly.
- 2Combine cocoa powder, 1 1/3 cups sugar, cornstarch, and salt in a saucepan. Gradually whisk in milk until smooth, then cook over medium heat, stirring constantly, until thickened (about 8 minutes).
- 3Remove from heat and quickly whisk in egg yolks one at a time, then stir in butter and vanilla extract until combined.
- 4Pour the chocolate filling into the prepared pie crust.
- 5Beat egg whites with an electric mixer until soft peaks form, then gradually add 6 tablespoons sugar while beating until stiff, glossy peaks form.
- 6Spread or pipe meringue over the hot chocolate filling, sealing the edges to the crust.
- 7Bake for 10-12 minutes until the meringue is golden brown, then cool on a wire rack for 1 hour before serving.
