Ingredients

  • 1 cup crushed graham crackers
  • 4 tablespoons melted butter
  • 8 ounces dark chocolate, chopped
  • 1/2 cup heavy cream
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, for topping
  • 2 tablespoons powdered sugar

Directions

  1. 1Mix crushed graham crackers with melted butter, press into a 9-inch springform pan, and bake at 350°F for 8 minutes until set.
  2. 2Heat 1/2 cup heavy cream until steaming, pour over chopped chocolate, let sit 2 minutes, then whisk until smooth.
  3. 3Beat egg whites with 2 tablespoons sugar until stiff peaks form, then gently fold into cooled chocolate mixture along with egg yolks and vanilla extract.
  4. 4Pour mousse over crust and refrigerate for at least 4 hours or overnight until firm.
  5. 5Before serving, whip 1 cup heavy cream with powdered sugar to soft peaks and spread or dollop over the mousse cake.
