Chocolate Mousse Cake

Ingredients

Directions
- 1Mix crushed graham crackers with melted butter, press into a 9-inch springform pan, and bake at 350°F for 8 minutes until set.
- 2Heat 1/2 cup heavy cream until steaming, pour over chopped chocolate, let sit 2 minutes, then whisk until smooth.
- 3Beat egg whites with 2 tablespoons sugar until stiff peaks form, then gently fold into cooled chocolate mixture along with egg yolks and vanilla extract.
- 4Pour mousse over crust and refrigerate for at least 4 hours or overnight until firm.
- 5Before serving, whip 1 cup heavy cream with powdered sugar to soft peaks and spread or dollop over the mousse cake.
