Ingredients

  • 1.5 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 2 tablespoons sugar
  • 8 oz semi-sweet chocolate, chopped
  • 3 tablespoons butter
  • 3 large eggs, separated
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, chilled
  • 2 tablespoons powdered sugar

Directions

  1. 1Mix graham cracker crumbs, 6 tablespoons melted butter, and 2 tablespoons sugar together, then press firmly into a 9-inch tart pan and refrigerate for 15 minutes.
  2. 2Melt chopped chocolate with 3 tablespoons butter over a double boiler, stirring until smooth, then let cool slightly.
  3. 3Whisk egg yolks with 2 tablespoons sugar and vanilla until pale, then fold into the cooled chocolate.
  4. 4Beat egg whites until stiff peaks form, then gently fold into the chocolate mixture in two additions.
  5. 5Whip heavy cream with powdered sugar until soft peaks form, then fold into the chocolate mousse.
  6. 6Pour mousse into the tart crust and refrigerate for at least 2 hours until set.
  7. 7Serve chilled with additional whipped cream or chocolate shavings if desired.
