Chocolate Wafer Cake

Ingredients
- •1 box chocolate wafer cookies
- •1 cup heavy cream
- •4 oz semi-sweet chocolate, chopped
- •2 tablespoons butter
- •1 tablespoon cocoa powder
- •2 tablespoons powdered sugar
- •1 teaspoon vanilla extract
Directions
- 1Heat heavy cream until steaming but not boiling, then pour over chopped chocolate and butter in a bowl.
- 2Let sit for 2 minutes, then stir until smooth and glossy; add vanilla extract and powdered sugar.
- 3Cool chocolate mixture for 5 minutes until slightly thickened.
- 4Spread a thin layer of chocolate cream on a chocolate wafer cookie, then stack another wafer on top.
- 5Continue layering cookies and cream until stack is about 2 inches tall, then wrap in plastic wrap.
- 6Refrigerate for at least 4 hours or until filling is firm.
- 7Slice the stack at a 45-degree angle with a sharp knife, dust with cocoa powder, and serve chilled.
