Chocolate Wafer Cake

Ingredients

  • 1 box chocolate wafer cookies
  • 1 cup heavy cream
  • 4 oz semi-sweet chocolate, chopped
  • 2 tablespoons butter
  • 1 tablespoon cocoa powder
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. 1Heat heavy cream until steaming but not boiling, then pour over chopped chocolate and butter in a bowl.
  2. 2Let sit for 2 minutes, then stir until smooth and glossy; add vanilla extract and powdered sugar.
  3. 3Cool chocolate mixture for 5 minutes until slightly thickened.
  4. 4Spread a thin layer of chocolate cream on a chocolate wafer cookie, then stack another wafer on top.
  5. 5Continue layering cookies and cream until stack is about 2 inches tall, then wrap in plastic wrap.
  6. 6Refrigerate for at least 4 hours or until filling is firm.
  7. 7Slice the stack at a 45-degree angle with a sharp knife, dust with cocoa powder, and serve chilled.
