Chole Bhature
Fluffy deep-fried bread served with spiced chickpeas in a rich, aromatic tomato-based curry.

Ingredients
- •2 cups dried chickpeas (soaked overnight)
- •2 cups all-purpose flour
- •1/2 cup yogurt
- •1 tablespoon baking powder
- •1/2 teaspoon salt
- •3 medium tomatoes, chopped
- •2 tablespoons oil
- •1 tablespoon ginger-garlic paste
- •2 teaspoons chole masala powder
- •1 teaspoon turmeric powder
- •1 large onion, finely chopped
- •oil for frying vegetable oil
Directions
- 1Boil soaked chickpeas with salt and turmeric until tender (about 45 minutes), then drain.
- 2Heat oil in a pan, sauté onion and ginger-garlic paste until golden, add chopped tomatoes and cook until soft.
- 3Add chole masala powder to the tomato mixture, stir well, then add boiled chickpeas and simmer for 15 minutes until gravy thickens.
- 4Mix flour, baking powder, salt, and yogurt to form a soft dough; let it rest for 4-6 hours.
- 5Knead the dough again, divide into 8 portions, and roll each into a thin circle.
- 6Heat oil in a deep pan until very hot, then carefully place bhature into hot oil and fry until puffed and golden brown on both sides.
- 7Remove bhature on paper towels, serve hot with the spiced chole curry alongside.
