Chole Bhature

Fluffy deep-fried bread served with spiced chickpeas in a rich, aromatic tomato-based curry.

Ingredients

  • 2 cups dried chickpeas (soaked overnight)
  • 2 cups all-purpose flour
  • 1/2 cup yogurt
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 medium tomatoes, chopped
  • 2 tablespoons oil
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons chole masala powder
  • 1 teaspoon turmeric powder
  • 1 large onion, finely chopped
  • oil for frying vegetable oil

Directions

  1. 1Boil soaked chickpeas with salt and turmeric until tender (about 45 minutes), then drain.
  2. 2Heat oil in a pan, sauté onion and ginger-garlic paste until golden, add chopped tomatoes and cook until soft.
  3. 3Add chole masala powder to the tomato mixture, stir well, then add boiled chickpeas and simmer for 15 minutes until gravy thickens.
  4. 4Mix flour, baking powder, salt, and yogurt to form a soft dough; let it rest for 4-6 hours.
  5. 5Knead the dough again, divide into 8 portions, and roll each into a thin circle.
  6. 6Heat oil in a deep pan until very hot, then carefully place bhature into hot oil and fry until puffed and golden brown on both sides.
  7. 7Remove bhature on paper towels, serve hot with the spiced chole curry alongside.
