Chole Masala
Creamy, spiced chickpeas in a rich tomato-based curry that's deeply flavorful and satisfying.

Ingredients
- •3 tablespoons vegetable oil
- •1 large onion, finely diced
- •2 tablespoons ginger-garlic paste
- •2 tomatoes, finely chopped
- •2 teaspoons cumin powder
- •1 teaspoon coriander powder
- •1 teaspoon garam masala powder
- •1/2 teaspoon turmeric powder
- •1/2 teaspoon red chili powder
- •2 cans (400g each) chickpeas, drained and rinsed
- •1 cup water
- •1/2 teaspoon salt
- •2 tablespoons fresh cilantro, chopped
Directions
- 1Heat oil in a large pan over medium heat and sauté the diced onion until golden brown, about 5 minutes.
- 2Add ginger-garlic paste and cook for 1 minute until fragrant.
- 3Add chopped tomatoes and cook for 3-4 minutes until they soften and break down.
- 4Stir in all the dry spices (cumin, coriander, garam masala, turmeric, and red chili powder) and mix well for 1 minute.
- 5Add the drained chickpeas and water, stirring to combine with the spice mixture.
- 6Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally, until the curry thickens and flavors meld.
- 7Season with salt to taste and garnish with fresh cilantro before serving.
