Chorizo and Bean Stew

A hearty Spanish stew combining spiced chorizo, tender beans, and vegetables in a savory tomato broth.

Ingredients

  • 2 tablespoons olive oil
  • 12 ounces chorizo sausage, sliced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • to taste Salt and pepper

Directions

  1. 1Heat olive oil in a large pot over medium-high heat and cook chorizo slices for 4-5 minutes until browned, then remove and set aside.
  2. 2In the same pot, sauté diced onion for 3 minutes until softened, then add minced garlic and cook for 1 minute more.
  3. 3Stir in smoked paprika and cook for 30 seconds until fragrant.
  4. 4Add diced tomatoes, chicken broth, bay leaf, and the cooked chorizo back to the pot.
  5. 5Bring to a simmer and add the drained beans, then reduce heat to medium-low.
  6. 6Simmer uncovered for 15-20 minutes, stirring occasionally, until flavors meld.
  7. 7Remove bay leaf, season with salt and pepper to taste, and serve hot.
