Chorizo and Bean Stew
A hearty Spanish stew combining spiced chorizo, tender beans, and vegetables in a savory tomato broth.

Ingredients
- •2 tablespoons olive oil
- •12 ounces chorizo sausage, sliced
- •1 medium onion, diced
- •4 cloves garlic, minced
- •1 can (14 ounces) diced tomatoes
- •2 cans (15 ounces each) white beans, drained and rinsed
- •1 cup chicken broth
- •1 teaspoon smoked paprika
- •1 bay leaf
- •to taste Salt and pepper
Directions
- 1Heat olive oil in a large pot over medium-high heat and cook chorizo slices for 4-5 minutes until browned, then remove and set aside.
- 2In the same pot, sauté diced onion for 3 minutes until softened, then add minced garlic and cook for 1 minute more.
- 3Stir in smoked paprika and cook for 30 seconds until fragrant.
- 4Add diced tomatoes, chicken broth, bay leaf, and the cooked chorizo back to the pot.
- 5Bring to a simmer and add the drained beans, then reduce heat to medium-low.
- 6Simmer uncovered for 15-20 minutes, stirring occasionally, until flavors meld.
- 7Remove bay leaf, season with salt and pepper to taste, and serve hot.
