Churchkhela (Georgian Walnut Grape Snack)

Threaded walnuts dipped again and again in thickened grape must, then hung to dry for days into a firm, candle-shaped sweet.

Ingredients

  • 250 g walnuts
  • 1 litre grape juice
  • 120 g all-purpose flour
  • 30 g sugar

Directions

  1. 1Thread the walnut halves onto strong thread, leaving a loop at the top for hanging.
  2. 2Simmer the grape juice with the sugar for twenty minutes until reduced by a third.
  3. 3Whisk the flour into a little cold grape juice, stir it into the hot pan, and cook until it thickens.
  4. 4Dip each walnut string into the warm mixture, lift, and hang twenty minutes until it stops dripping.
  5. 5Dip and hang again four more times, building the coating to about a centimetre thick.
  6. 6Hang somewhere cool and airy for five days, until dry to the touch and firm.

💡 Five dips twenty minutes apart, then five days hanging. Rushing the gaps between dips gives a thick coat that never dries through.
