Tender marinated beef grilled to perfection and served with chimichurri sauce for an authentic Argentine steakhouse experience.

Ingredients

  • 2 lbs beef skirt or flank steak
  • 6 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh parsley, chopped
  • 1/4 cup olive oil for chimichurri
  • 3 tablespoons red wine vinegar for chimichurri
  • 1/2 teaspoon red pepper flakes

Directions

  1. 1Combine garlic, 1/4 cup olive oil, 2 tablespoons vinegar, oregano, cumin, salt, and pepper in a bowl to create the marinade.
  2. 2Rub the marinade over the beef, cover, and refrigerate for at least 30 minutes or up to 4 hours.
  3. 3Prepare chimichurri by mixing parsley, 1/4 cup olive oil, 3 tablespoons vinegar, minced garlic, and red pepper flakes in a bowl.
  4. 4Heat a grill or grill pan to high heat until very hot.
  5. 5Grill the steak for 4-5 minutes per side for medium-rare, adjusting time based on thickness and desired doneness.
  6. 6Remove steak from heat and let rest for 5 minutes.
  7. 7Slice the beef against the grain into thin strips and serve with chimichurri sauce on the side.
