Ingredients
- •2 lbs beef skirt or flank steak
- •6 cloves garlic, minced
- •1/4 cup olive oil
- •2 tablespoons red wine vinegar
- •1 tablespoon dried oregano
- •1 teaspoon cumin
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1 cup fresh parsley, chopped
- •1/4 cup olive oil for chimichurri
- •3 tablespoons red wine vinegar for chimichurri
- •1/2 teaspoon red pepper flakes
Directions
- 1Combine garlic, 1/4 cup olive oil, 2 tablespoons vinegar, oregano, cumin, salt, and pepper in a bowl to create the marinade.
- 2Rub the marinade over the beef, cover, and refrigerate for at least 30 minutes or up to 4 hours.
- 3Prepare chimichurri by mixing parsley, 1/4 cup olive oil, 3 tablespoons vinegar, minced garlic, and red pepper flakes in a bowl.
- 4Heat a grill or grill pan to high heat until very hot.
- 5Grill the steak for 4-5 minutes per side for medium-rare, adjusting time based on thickness and desired doneness.
- 6Remove steak from heat and let rest for 5 minutes.
- 7Slice the beef against the grain into thin strips and serve with chimichurri sauce on the side.
