Cilantro Lime Rice

Mexican-American long-grain rice finished with fresh lime and cilantro for a bright reusable side for tacos, bowls, and grilled proteins.

Ingredients

  • 1 1/2 cups long-grain white rice
  • 3 cups water
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 3 tbsp fresh lime juice
  • 1/2 cup fresh cilantro, chopped

Directions

  1. 1Rinse the rice until the water runs mostly clear, then drain thoroughly.
  2. 2Heat vegetable oil in a saucepan and stir the rice for 1 minute.
  3. 3Add water and salt and bring to a boil.
  4. 4Cover, reduce heat to low, and cook for 15 minutes.
  5. 5Rest the rice covered for 5 minutes, then fluff with a fork.
  6. 6Fold in lime juice and cilantro just before serving.

💡 Add lime and cilantro after the rice has rested; early acid can toughen the grains and dull the herbs.
