Cilantro Lime Rice
Mexican-American long-grain rice finished with fresh lime and cilantro for a bright reusable side for tacos, bowls, and grilled proteins.

Ingredients
- •1 1/2 cups long-grain white rice
- •3 cups water
- •1 tbsp vegetable oil
- •1 tsp salt
- •3 tbsp fresh lime juice
- •1/2 cup fresh cilantro, chopped
Directions
- 1Rinse the rice until the water runs mostly clear, then drain thoroughly.
- 2Heat vegetable oil in a saucepan and stir the rice for 1 minute.
- 3Add water and salt and bring to a boil.
- 4Cover, reduce heat to low, and cook for 15 minutes.
- 5Rest the rice covered for 5 minutes, then fluff with a fork.
- 6Fold in lime juice and cilantro just before serving.
💡 Add lime and cilantro after the rice has rested; early acid can toughen the grains and dull the herbs.
