Citrus Salad

Ingredients
- •6 cups mixed greens or spinach
- •2 oranges, peeled and segmented
- •2 grapefruits, peeled and segmented
- •1 red onion, thinly sliced
- •1/2 cup sliced almonds, toasted
- •1/4 cup olive oil
- •2 tablespoons fresh lemon juice
- •1 tablespoon honey
- •1 teaspoon Dijon mustard
- •to taste Salt and pepper
Directions
- 1Segment the oranges and grapefruits by cutting away the peel and white pith, then carefully separate the fruit segments from the membranes.
- 2Place mixed greens in a large salad bowl and add the citrus segments, red onion slices, and toasted almonds.
- 3In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard until emulsified.
- 4Drizzle the vinaigrette over the salad and toss gently to combine.
- 5Season with salt and pepper to taste and serve immediately.
