Ingredients

  • 6 cups mixed greens or spinach
  • 2 oranges, peeled and segmented
  • 2 grapefruits, peeled and segmented
  • 1 red onion, thinly sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper

Directions

  1. 1Segment the oranges and grapefruits by cutting away the peel and white pith, then carefully separate the fruit segments from the membranes.
  2. 2Place mixed greens in a large salad bowl and add the citrus segments, red onion slices, and toasted almonds.
  3. 3In a small bowl, whisk together olive oil, lemon juice, honey, and Dijon mustard until emulsified.
  4. 4Drizzle the vinaigrette over the salad and toss gently to combine.
  5. 5Season with salt and pepper to taste and serve immediately.
