Elegant choux pastry filled with creamy custard and topped with glossy chocolate ganache.

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 4 eggs
  • 2 cups whole milk
  • 5 egg yolks
  • 1/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate
  • 1/4 cup butter

Directions

  1. 1Preheat oven to 400°F. Bring water and butter to boil, remove from heat, stir in flour until combined.
  2. 2Transfer dough to piping bag and pipe 4-inch logs onto parchment-lined baking sheet. Bake 25-30 minutes until golden and puffed.
  3. 3Heat milk until steaming. Whisk egg yolks with sugar until pale, add cornstarch, then slowly whisk in hot milk.
  4. 4Return mixture to stove and cook 2-3 minutes stirring constantly until thickened. Stir in vanilla and let cool.
  5. 5Slice cooled éclairs in half lengthwise and fill with pastry cream using a piping bag.
  6. 6Chop chocolate and butter, melt together over gentle heat until smooth and glossy.
  7. 7Dip top of each éclair into chocolate ganache and let set before serving.
