Éclair
Elegant choux pastry filled with creamy custard and topped with glossy chocolate ganache.

Ingredients
- •1 cup water
- •1/2 cup butter
- •1 cup all-purpose flour
- •4 eggs
- •2 cups whole milk
- •5 egg yolks
- •1/4 cup sugar
- •3 tablespoons cornstarch
- •1 teaspoon vanilla extract
- •4 ounces dark chocolate
- •1/4 cup butter
Directions
- 1Preheat oven to 400°F. Bring water and butter to boil, remove from heat, stir in flour until combined.
- 2Transfer dough to piping bag and pipe 4-inch logs onto parchment-lined baking sheet. Bake 25-30 minutes until golden and puffed.
- 3Heat milk until steaming. Whisk egg yolks with sugar until pale, add cornstarch, then slowly whisk in hot milk.
- 4Return mixture to stove and cook 2-3 minutes stirring constantly until thickened. Stir in vanilla and let cool.
- 5Slice cooled éclairs in half lengthwise and fill with pastry cream using a piping bag.
- 6Chop chocolate and butter, melt together over gentle heat until smooth and glossy.
- 7Dip top of each éclair into chocolate ganache and let set before serving.
