Classic Beef Stew

A hearty, slow-cooked stew with tender beef, potatoes, and carrots in a rich, savory gravy.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 4 medium potatoes, cubed
  • 3 medium carrots, sliced
  • 2 teaspoons dried thyme
  • 2 bay leaves bay leaves
  • to taste salt and black pepper

Directions

  1. 1Toss beef cubes with flour, salt, and pepper. Heat oil in a large pot over medium-high heat and brown the beef in batches, about 3-4 minutes per side. Remove and set aside.
  2. 2In the same pot, sauté diced onion until softened, about 3 minutes. Add minced garlic and cook for 1 minute until fragrant.
  3. 3Pour in red wine and scrape up any browned bits from the bottom of the pot. Add beef broth and return the beef to the pot.
  4. 4Stir in thyme and bay leaves. Bring to a boil, then reduce heat and simmer covered for 90 minutes.
  5. 5Add potatoes and carrots, and continue simmering for 45 minutes until vegetables are tender and beef is very soft.
  6. 6Remove bay leaves, taste and adjust seasonings with salt and pepper. Serve hot.
