- •1 egg, beaten
Directions
- 1Make pie crust by mixing flour and salt, cutting in cold butter until crumbly, then adding ice water until dough forms. Divide in half, wrap, and refrigerate for 1 hour.
- 2Preheat oven to 375°F. Roll out one dough portion and line a 9-inch pie dish.
- 3In a bowl, combine blueberries, sugar, cornstarch, lemon juice, and cinnamon. Pour filling into crust.
- 4Roll out second dough portion and place over filling, sealing edges. Brush with beaten egg and cut vent holes.
- 5Bake for 50-60 minutes until crust is golden and filling bubbles at edges. Cool on wire rack for at least 3 hours before serving.
