Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup cold butter, cubed
  • 6-8 tablespoons ice water
  • 6 cups fresh blueberries
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 2 tablespoons lemon juice
  • 1/2 teaspoon cinnamon
  • 1 egg, beaten

Directions

  1. 1Make pie crust by mixing flour and salt, cutting in cold butter until crumbly, then adding ice water until dough forms. Divide in half, wrap, and refrigerate for 1 hour.
  2. 2Preheat oven to 375°F. Roll out one dough portion and line a 9-inch pie dish.
  3. 3In a bowl, combine blueberries, sugar, cornstarch, lemon juice, and cinnamon. Pour filling into crust.
  4. 4Roll out second dough portion and place over filling, sealing edges. Brush with beaten egg and cut vent holes.
  5. 5Bake for 50-60 minutes until crust is golden and filling bubbles at edges. Cool on wire rack for at least 3 hours before serving.
