Classic Cheese Dip

Ingredients

  • 1 pound chorizo sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup whole milk
  • 1 can (10 ounces) diced tomatoes with green chiles, drained
  • 1/2 cup sliced jalapeños, drained
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • to taste Salt and pepper

Directions

  1. 1Cook the chorizo in a large skillet over medium-high heat until browned, breaking it apart as it cooks. Drain excess fat and set aside.
  2. 2In a large saucepan, combine cream cheese and milk over medium heat, stirring until the cream cheese begins to melt.
  3. 3Add cheddar and Monterey Jack cheese to the saucepan, stirring constantly until all cheese is melted and smooth.
  4. 4Stir in the cooked chorizo, diced tomatoes with green chiles, jalapeños, cilantro, and cumin.
  5. 5Season with salt and pepper to taste and stir until well combined.
  6. 6Transfer the dip to a serving bowl or slow cooker set on warm, and serve with tortilla chips or crackers.
