Classic Cheese Dip

Ingredients
- •1 pound chorizo sausage, cooked and crumbled
- •2 cups shredded cheddar cheese
- •1 cup shredded Monterey Jack cheese
- •8 ounces cream cheese, softened
- •1/2 cup whole milk
- •1 can (10 ounces) diced tomatoes with green chiles, drained
- •1/2 cup sliced jalapeños, drained
- •1/4 cup fresh cilantro, chopped
- •1 teaspoon cumin
- •to taste Salt and pepper
Directions
- 1Cook the chorizo in a large skillet over medium-high heat until browned, breaking it apart as it cooks. Drain excess fat and set aside.
- 2In a large saucepan, combine cream cheese and milk over medium heat, stirring until the cream cheese begins to melt.
- 3Add cheddar and Monterey Jack cheese to the saucepan, stirring constantly until all cheese is melted and smooth.
- 4Stir in the cooked chorizo, diced tomatoes with green chiles, jalapeños, cilantro, and cumin.
- 5Season with salt and pepper to taste and stir until well combined.
- 6Transfer the dip to a serving bowl or slow cooker set on warm, and serve with tortilla chips or crackers.
