Classic Chicken Liver Pâté

Ingredients

  • 1 pound chicken livers
  • 4 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons brandy or cognac
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1Melt 2 tablespoons of butter in a large skillet over medium-high heat and sauté the diced onion until soft, about 3 minutes.
  2. 2Add garlic and cook for 1 minute until fragrant, then add chicken livers and cook until they are no longer pink inside, about 5-7 minutes.
  3. 3Pour in the brandy and let simmer for 2 minutes to cook off the alcohol.
  4. 4Transfer the liver mixture to a food processor, add remaining butter, thyme, nutmeg, salt, and pepper, and blend until completely smooth.
  5. 5Add heavy cream and pulse until fully incorporated and creamy.
  6. 6Pour the pâté into a serving dish and refrigerate for at least 2 hours before serving with crusty bread or crackers.
