Classic Chicken Liver Pâté

Ingredients
- •1 pound chicken livers
- •4 tablespoons butter
- •1 medium onion, diced
- •2 cloves garlic, minced
- •2 tablespoons brandy or cognac
- •1/4 teaspoon dried thyme
- •1/4 teaspoon ground nutmeg
- •2 tablespoons heavy cream
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
Directions
- 1Melt 2 tablespoons of butter in a large skillet over medium-high heat and sauté the diced onion until soft, about 3 minutes.
- 2Add garlic and cook for 1 minute until fragrant, then add chicken livers and cook until they are no longer pink inside, about 5-7 minutes.
- 3Pour in the brandy and let simmer for 2 minutes to cook off the alcohol.
- 4Transfer the liver mixture to a food processor, add remaining butter, thyme, nutmeg, salt, and pepper, and blend until completely smooth.
- 5Add heavy cream and pulse until fully incorporated and creamy.
- 6Pour the pâté into a serving dish and refrigerate for at least 2 hours before serving with crusty bread or crackers.
