Classic Chicken Stew

Ingredients
- •2 lbs chicken breasts, cubed
- •3 tablespoons olive oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •3 medium carrots, sliced
- •3 medium potatoes, cubed
- •2 cups chicken broth
- •1 can (14.5 oz) diced tomatoes
- •1 teaspoon dried thyme
- •1 teaspoon salt
- •0.5 teaspoon black pepper
- •1 cup frozen peas
Directions
- 1Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, then brown it for 5 minutes. Remove and set aside.
- 2In the same pot, sauté onion and garlic until fragrant, about 2 minutes.
- 3Add carrots and potatoes, cook for 3 minutes while stirring occasionally.
- 4Return chicken to the pot, then pour in chicken broth and diced tomatoes with their juice. Add thyme, salt, and pepper.
- 5Bring to a boil, then reduce heat and simmer covered for 25 minutes until vegetables are tender.
- 6Stir in frozen peas and cook for an additional 3 minutes until heated through. Taste and adjust seasonings as needed.
