Ingredients

  • 2 lbs chicken breasts, cubed
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 medium potatoes, cubed
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas

Directions

  1. 1Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, then brown it for 5 minutes. Remove and set aside.
  2. 2In the same pot, sauté onion and garlic until fragrant, about 2 minutes.
  3. 3Add carrots and potatoes, cook for 3 minutes while stirring occasionally.
  4. 4Return chicken to the pot, then pour in chicken broth and diced tomatoes with their juice. Add thyme, salt, and pepper.
  5. 5Bring to a boil, then reduce heat and simmer covered for 25 minutes until vegetables are tender.
  6. 6Stir in frozen peas and cook for an additional 3 minutes until heated through. Taste and adjust seasonings as needed.
