Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 1 teaspoon sesame oil
  • 3 cups cooked white rice

Directions

  1. 1Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add chicken pieces and cook until golden and cooked through, about 5-7 minutes. Transfer to a plate.
  2. 2Add remaining oil to the wok. Stir-fry garlic and ginger for 30 seconds until fragrant.
  3. 3Add mixed vegetables and stir-fry for 4-5 minutes until tender-crisp.
  4. 4Whisk together soy sauce, chicken broth, cornstarch, and sesame oil in a small bowl.
  5. 5Return chicken to the wok, pour in sauce, and toss everything together. Cook for 1-2 minutes until sauce thickens.
  6. 6Serve immediately over cooked rice.
