Classic Chicken Stir Fry

Ingredients
- •1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- •3 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
- •3 cloves garlic, minced
- •1 tablespoon fresh ginger, minced
- •1/4 cup soy sauce
- •2 tablespoons vegetable oil
- •1 tablespoon cornstarch
- •1/2 cup chicken broth
- •1 teaspoon sesame oil
- •3 cups cooked white rice
Directions
- 1Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add chicken pieces and cook until golden and cooked through, about 5-7 minutes. Transfer to a plate.
- 2Add remaining oil to the wok. Stir-fry garlic and ginger for 30 seconds until fragrant.
- 3Add mixed vegetables and stir-fry for 4-5 minutes until tender-crisp.
- 4Whisk together soy sauce, chicken broth, cornstarch, and sesame oil in a small bowl.
- 5Return chicken to the wok, pour in sauce, and toss everything together. Cook for 1-2 minutes until sauce thickens.
- 6Serve immediately over cooked rice.
