Classic Chocolate Soufflé

- •4 ounces dark chocolate, chopped
- •3 tablespoons butter
- •3 tablespoons all-purpose flour
- •1 cup whole milk
- •4 egg yolks
- •1 teaspoon vanilla extract
- •6 egg whites

- •2 tablespoons granulated sugar
- •1 tablespoon cocoa powder for dusting
Directions
- 1Preheat oven to 375°F and butter 4 ramekins, dusting with sugar.
- 2Melt chocolate with 2 tablespoons butter, set aside.
- 3Make a roux with remaining butter and flour, whisk in milk to create a thick sauce, then stir in chocolate, egg yolks, and vanilla.
- 4Beat egg whites with salt until stiff peaks form, then gently fold into chocolate mixture in two additions.
- 5Divide batter among ramekins and place on a baking sheet.
- 6Bake for 12-14 minutes until puffed but centers still jiggle slightly.
- 7Dust with cocoa powder and serve immediately.
