Classic Chocolate Soufflé

Ingredients

  • 4 ounces dark chocolate, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 6 egg whites
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 tablespoon cocoa powder for dusting

Directions

  1. 1Preheat oven to 375°F and butter 4 ramekins, dusting with sugar.
  2. 2Melt chocolate with 2 tablespoons butter, set aside.
  3. 3Make a roux with remaining butter and flour, whisk in milk to create a thick sauce, then stir in chocolate, egg yolks, and vanilla.
  4. 4Beat egg whites with salt until stiff peaks form, then gently fold into chocolate mixture in two additions.
  5. 5Divide batter among ramekins and place on a baking sheet.
  6. 6Bake for 12-14 minutes until puffed but centers still jiggle slightly.
  7. 7Dust with cocoa powder and serve immediately.
