Classic Christmas Fruitcake

Ingredients
- •1 cup butter, softened
- •1 cup brown sugar
- •4 large eggs
- •2 cups all-purpose flour
- •1 teaspoon baking powder
- •2 teaspoons ground cinnamon
- •1 teaspoon ground nutmeg
- •2 cups mixed dried fruit (raisins, cranberries, apricots)
- •1 cup chopped walnuts or pecans
- •1/2 cup brandy or apple juice
Directions
- 1Preheat oven to 325°F and grease a 9-inch round cake pan. Line with parchment paper.
- 2Cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time.
- 3In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Fold into butter mixture alternately with brandy.
- 4Stir in dried fruits and nuts until evenly distributed throughout batter.
- 5Pour batter into prepared pan and bake for 2-2.5 hours until a toothpick inserted in center comes out clean.
- 6Cool in pan for 15 minutes, then turn out onto wire rack to cool completely.
