Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 cups mixed dried fruit (raisins, cranberries, apricots)
  • 1 cup chopped walnuts or pecans
  • 1/2 cup brandy or apple juice

Directions

  1. 1Preheat oven to 325°F and grease a 9-inch round cake pan. Line with parchment paper.
  2. 2Cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time.
  3. 3In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Fold into butter mixture alternately with brandy.
  4. 4Stir in dried fruits and nuts until evenly distributed throughout batter.
  5. 5Pour batter into prepared pan and bake for 2-2.5 hours until a toothpick inserted in center comes out clean.
  6. 6Cool in pan for 15 minutes, then turn out onto wire rack to cool completely.
