Classic French Apple Tart

Directions
- 1Preheat oven to 400°F (200°C). Place puff pastry on a parchment-lined baking sheet and prick with a fork.
- 2Peel, core, and slice apples into thin, even slices. Toss with granulated sugar, brown sugar, cinnamon, vanilla, and salt.
- 3Melt butter in a large skillet over medium heat and sauté apples for 5-7 minutes until slightly softened and golden.
- 4Arrange caramelized apples in overlapping rows on the puff pastry, leaving a 1/2-inch border.
- 5Bake for 25-30 minutes until the pastry is puffed and golden brown.
- 6Warm apricot jam with water and brush over the hot tart to glaze.
