Classic French Fruit Tart
A buttery pastry shell filled with creamy pastry cream and topped with colorful fresh fruit glazed to perfection.

Ingredients
- •1 cup all-purpose flour
- •6 tablespoons cold butter, cubed
- •1 egg yolk
- •2 tablespoons cold water
- •2 cups whole milk
- •4 egg yolks
- •1/2 cup sugar
- •3 tablespoons cornstarch
- •1 teaspoon vanilla extract
- •2 cups mixed fresh fruit (strawberries, blueberries, kiwi, raspberries)
- •1/2 cup apricot jam
- •2 tablespoons water
Directions
- 1Mix flour and cold butter until breadcrumb texture forms, then add egg yolk and water to form dough. Chill for 30 minutes.
- 2Press dough into a tart pan and bake at 375°F for 12-15 minutes until golden; let cool completely.
- 3Heat milk in a saucepan. Whisk egg yolks with sugar and cornstarch until pale, then slowly add hot milk while whisking. Return mixture to saucepan and cook, stirring constantly, until thickened (about 3 minutes); stir in vanilla.
- 4Pour warm pastry cream into cooled tart shell and refrigerate for at least 30 minutes.
- 5Arrange fresh fruit on top of the pastry cream in a decorative pattern.
- 6Heat apricot jam with water in a small saucepan until smooth, then brush gently over the fruit to glaze.
- 7Refrigerate until ready to serve, and slice into wedges to serve.
