Classic French Fruit Tart

A buttery pastry shell filled with creamy pastry cream and topped with colorful fresh fruit glazed to perfection.

Ingredients

  • 1 cup all-purpose flour
  • 6 tablespoons cold butter, cubed
  • 1 egg yolk
  • 2 tablespoons cold water
  • 2 cups whole milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruit (strawberries, blueberries, kiwi, raspberries)
  • 1/2 cup apricot jam
  • 2 tablespoons water

Directions

  1. 1Mix flour and cold butter until breadcrumb texture forms, then add egg yolk and water to form dough. Chill for 30 minutes.
  2. 2Press dough into a tart pan and bake at 375°F for 12-15 minutes until golden; let cool completely.
  3. 3Heat milk in a saucepan. Whisk egg yolks with sugar and cornstarch until pale, then slowly add hot milk while whisking. Return mixture to saucepan and cook, stirring constantly, until thickened (about 3 minutes); stir in vanilla.
  4. 4Pour warm pastry cream into cooled tart shell and refrigerate for at least 30 minutes.
  5. 5Arrange fresh fruit on top of the pastry cream in a decorative pattern.
  6. 6Heat apricot jam with water in a small saucepan until smooth, then brush gently over the fruit to glaze.
  7. 7Refrigerate until ready to serve, and slice into wedges to serve.
