- •1/4 cup heavy cream
- •1 pinch salt
- •2 tablespoons powdered sugar for dusting
Directions
- 1Mix flour, cold butter, and salt until resembling breadcrumbs, then bind with egg yolk and water; press into a 9-inch tart pan and blind bake at 375°F for 12 minutes.
- 2Whisk together eggs, sugar, lemon juice, and zest until pale and combined.
- 3Stir in heavy cream and pour filling into the pre-baked crust.
- 4Bake at 350°F for 20-25 minutes until the filling is set but slightly jiggly in the center.
- 5Cool completely on a wire rack, then refrigerate for at least 2 hours.
- 6Dust with powdered sugar before serving.
