Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cold butter, cubed
  • 1 egg yolk egg yolk
  • 2 tablespoons cold water
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup heavy cream
  • 1 pinch salt
  • 2 tablespoons powdered sugar for dusting

Directions

  1. 1Mix flour, cold butter, and salt until resembling breadcrumbs, then bind with egg yolk and water; press into a 9-inch tart pan and blind bake at 375°F for 12 minutes.
  2. 2Whisk together eggs, sugar, lemon juice, and zest until pale and combined.
  3. 3Stir in heavy cream and pour filling into the pre-baked crust.
  4. 4Bake at 350°F for 20-25 minutes until the filling is set but slightly jiggly in the center.
  5. 5Cool completely on a wire rack, then refrigerate for at least 2 hours.
  6. 6Dust with powdered sugar before serving.
