Classic Italian Frittata

Ingredients

  • 8 large eggs
  • 1/4 cup whole milk
  • 1/2 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 cups fresh spinach, chopped
  • 1/4 cup diced ham or bacon
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Whisk together eggs, milk, salt, and pepper in a bowl.
  3. 3Heat olive oil in a 10-inch oven-safe skillet over medium heat and sauté onion, bell pepper, and ham for 5 minutes until softened.
  4. 4Add spinach to the skillet and cook for 1 minute until wilted.
  5. 5Pour egg mixture over vegetables and sprinkle cheese on top, cooking on stovetop for 2 minutes until edges begin to set.
  6. 6Transfer skillet to oven and bake for 8-10 minutes until center is set and top is golden.
  7. 7Remove from oven, let cool for 2 minutes, then slice and serve warm.
