Classic Louisiana Chicken and Sausage Gumbo

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 1 large onion, diced
  • 3 stalks celery, diced
  • 2 large bell peppers, diced
  • 1 lb chicken breast, cut into chunks
  • 1 lb smoked sausage, sliced
  • 6 cups chicken broth
  • 2 cups fresh okra, sliced
  • 2 teaspoons Cajun seasoning
  • 2 cloves garlic, minced
  • 3 cups cooked white rice

Directions

  1. 1Heat oil in a large pot over medium heat, then gradually whisk in flour to make a dark roux, stirring constantly for 30-40 minutes until chocolate brown.
  2. 2Add diced onion, celery, and bell pepper to the roux and sauté for 5 minutes until softened.
  3. 3Stir in garlic and cook for 1 minute, then add chicken and sausage, cooking for 5 minutes.
  4. 4Pour in chicken broth and Cajun seasoning, bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5Add sliced okra and simmer for an additional 15 minutes until chicken is fully cooked and okra is tender.
  6. 6Serve hot over a scoop of white rice in wide bowls.
