Classic Louisiana Chicken and Sausage Gumbo

Ingredients
- •1/2 cup all-purpose flour
- •1/2 cup vegetable oil
- •1 large onion, diced
- •3 stalks celery, diced
- •2 large bell peppers, diced
- •1 lb chicken breast, cut into chunks
- •1 lb smoked sausage, sliced
- •6 cups chicken broth
- •2 cups fresh okra, sliced
- •2 teaspoons Cajun seasoning
- •2 cloves garlic, minced
- •3 cups cooked white rice
Directions
- 1Heat oil in a large pot over medium heat, then gradually whisk in flour to make a dark roux, stirring constantly for 30-40 minutes until chocolate brown.
- 2Add diced onion, celery, and bell pepper to the roux and sauté for 5 minutes until softened.
- 3Stir in garlic and cook for 1 minute, then add chicken and sausage, cooking for 5 minutes.
- 4Pour in chicken broth and Cajun seasoning, bring to a boil, then reduce heat and simmer for 20 minutes.
- 5Add sliced okra and simmer for an additional 15 minutes until chicken is fully cooked and okra is tender.
