Classic Pecan Pralines

Ingredients
- •2 cups brown sugar
- •1 cup granulated sugar
- •1 cup heavy cream
- •4 tablespoons butter
- •1 teaspoon vanilla extract
- •1/4 teaspoon salt
- •2 cups pecan halves
Directions
- 1Combine brown sugar, granulated sugar, heavy cream, and butter in a heavy-bottomed saucepan over medium heat, stirring until sugar dissolves.
- 2Insert a candy thermometer and cook without stirring until the mixture reaches 236-238°F (soft-ball stage), about 10-12 minutes.
- 3Remove from heat and stir in vanilla extract and salt.
- 4Fold in pecan halves and stir vigorously for 1-2 minutes until the mixture begins to thicken and become creamy.
- 5Quickly drop spoonfuls of the mixture onto parchment paper using two spoons or a candy scoop.
- 6Allow pralines to cool and harden at room temperature for at least 2 hours before serving.
