Classic Pecan Pralines

Ingredients

  • 2 cups brown sugar
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves

Directions

  1. 1Combine brown sugar, granulated sugar, heavy cream, and butter in a heavy-bottomed saucepan over medium heat, stirring until sugar dissolves.
  2. 2Insert a candy thermometer and cook without stirring until the mixture reaches 236-238°F (soft-ball stage), about 10-12 minutes.
  3. 3Remove from heat and stir in vanilla extract and salt.
  4. 4Fold in pecan halves and stir vigorously for 1-2 minutes until the mixture begins to thicken and become creamy.
  5. 5Quickly drop spoonfuls of the mixture onto parchment paper using two spoons or a candy scoop.
  6. 6Allow pralines to cool and harden at room temperature for at least 2 hours before serving.
