Classic Rice Pudding

Ingredients
- •2 cups whole milk
- •1 cup heavy cream
- •1 cup cooked short-grain white rice
- •3 egg yolks
- •1/4 cup granulated sugar
- •1/2 teaspoon vanilla extract
- •1/4 teaspoon ground cinnamon
- •1/8 teaspoon ground nutmeg
- •1/4 cup raisins
- •pinch salt
Directions
- 1Heat milk and cream in a saucepan over medium heat until steam forms, then add cooked rice and simmer for 5 minutes.
- 2In a bowl, whisk together egg yolks, sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
- 3Slowly add a ladleful of hot rice mixture to the egg mixture while whisking constantly to temper the yolks.
- 4Pour the tempered egg mixture back into the saucepan with the rice, stirring constantly over medium-low heat for 3-5 minutes until thickened.
- 5Fold in the raisins and cook for 1 more minute, then remove from heat.
- 6Serve warm, or transfer to a bowl and refrigerate for at least 2 hours to serve chilled.
