Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup cooked short-grain white rice
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup raisins
  • pinch salt

Directions

  1. 1Heat milk and cream in a saucepan over medium heat until steam forms, then add cooked rice and simmer for 5 minutes.
  2. 2In a bowl, whisk together egg yolks, sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  3. 3Slowly add a ladleful of hot rice mixture to the egg mixture while whisking constantly to temper the yolks.
  4. 4Pour the tempered egg mixture back into the saucepan with the rice, stirring constantly over medium-low heat for 3-5 minutes until thickened.
  5. 5Fold in the raisins and cook for 1 more minute, then remove from heat.
  6. 6Serve warm, or transfer to a bowl and refrigerate for at least 2 hours to serve chilled.
