Classic Roast Beef

Ingredients

  • 4 pounds beef chuck roast or ribeye
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 2 cups beef broth
  • 2 medium carrots, chopped
  • 3 medium potatoes, chunked
  • 1 medium onion, quartered

Directions

  1. 1Preheat oven to 375°F. Pat beef dry and season generously with salt and pepper on all sides.
  2. 2Heat olive oil in a large roasting pan over medium-high heat and sear the beef on all sides until browned, about 12 minutes total.
  3. 3Rub minced garlic, rosemary, and thyme all over the roast, then arrange carrots, potatoes, and onion around it.
  4. 4Pour beef broth into the pan around the roast and transfer to the oven.
  5. 5Roast for 45-60 minutes, basting every 15 minutes, until internal temperature reaches 135°F for medium-rare.
  6. 6Remove from oven, tent with foil, and let rest for 10 minutes before carving and serving with vegetables and pan gravy.
