Classic Roast Beef

Ingredients
- •4 pounds beef chuck roast or ribeye
- •2 tablespoons kosher salt
- •1 tablespoon black pepper
- •2 tablespoons olive oil
- •4 cloves garlic, minced
- •2 tablespoons fresh rosemary
- •2 tablespoons fresh thyme
- •2 cups beef broth
- •2 medium carrots, chopped
- •3 medium potatoes, chunked
- •1 medium onion, quartered
Directions
- 1Preheat oven to 375°F. Pat beef dry and season generously with salt and pepper on all sides.
- 2Heat olive oil in a large roasting pan over medium-high heat and sear the beef on all sides until browned, about 12 minutes total.
- 3Rub minced garlic, rosemary, and thyme all over the roast, then arrange carrots, potatoes, and onion around it.
- 4Pour beef broth into the pan around the roast and transfer to the oven.
- 5Roast for 45-60 minutes, basting every 15 minutes, until internal temperature reaches 135°F for medium-rare.
- 6Remove from oven, tent with foil, and let rest for 10 minutes before carving and serving with vegetables and pan gravy.
