Classic Strawberry Tart

Ingredients
- •1 1/2 cups all-purpose flour
- •1/2 cup cold butter, cubed
- •1/4 cup sugar
- •1 egg yolk
- •2 cups whole milk
- •4 egg yolks
- •1/3 cup sugar
- •3 tablespoons cornstarch
- •1 teaspoon vanilla extract
- •2 pounds fresh strawberries, hulled
- •1/3 cup apricot jam
Directions
- 1Mix flour, cold butter, 1/4 cup sugar, and 1 egg yolk until a dough forms; press into a 9-inch tart pan and bake at 375°F for 15 minutes until golden.
- 2Heat milk in a saucepan until steaming, then whisk together 4 egg yolks, 1/3 cup sugar, and cornstarch in a bowl.
- 3Slowly pour hot milk into egg mixture while whisking constantly, then return to pan and cook over medium heat, stirring until thickened, about 2 minutes; stir in vanilla.
- 4Pour custard into cooled crust and refrigerate for at least 30 minutes until set.
- 5Arrange fresh strawberries on top of custard in concentric circles.
- 6Melt apricot jam with 1 tablespoon water and brush over strawberries for a glossy finish; chill until ready to serve.
