Classic Vanilla Custard

Ingredients
- •2 cups whole milk
- •1 vanilla bean or 1 teaspoon vanilla extract
- •5 egg yolks
- •1/4 cup granulated sugar
- •2 tablespoons cornstarch
- •1/8 teaspoon salt
Directions
- 1Heat milk in a saucepan over medium heat until it begins to steam; if using vanilla bean, split it and scrape seeds into the milk, then add the pod.
- 2Whisk together egg yolks, sugar, cornstarch, and salt in a bowl until pale and thick.
- 3Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs.
- 4Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon (about 3-5 minutes).
- 5Remove from heat and stir in vanilla extract if not using vanilla bean; strain through a fine sieve.
- 6Pour into serving dishes and refrigerate for at least 2 hours before serving.
