Ingredients

  • 2 cups whole milk
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 5 egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt

Directions

  1. 1Heat milk in a saucepan over medium heat until it begins to steam; if using vanilla bean, split it and scrape seeds into the milk, then add the pod.
  2. 2Whisk together egg yolks, sugar, cornstarch, and salt in a bowl until pale and thick.
  3. 3Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs.
  4. 4Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon (about 3-5 minutes).
  5. 5Remove from heat and stir in vanilla extract if not using vanilla bean; strain through a fine sieve.
  6. 6Pour into serving dishes and refrigerate for at least 2 hours before serving.
