Classic Vegetable Stir Fry

Ingredients
- •3 tablespoons vegetable oil
- •3 cloves garlic, minced
- •1 tablespoon fresh ginger, minced
- •2 cups broccoli florets
- •1 large bell pepper, sliced
- •2 cups snap peas
- •1 cup carrots, sliced thin
- •8 ounces mushrooms, sliced
- •3 tablespoons soy sauce
- •1 tablespoon sesame oil
- •1 teaspoon cornstarch
- •1/4 cup water
Directions
- 1Mix cornstarch and water in a small bowl to create a slurry; set aside with soy sauce and sesame oil.
- 2Heat vegetable oil in a large wok or skillet over high heat until shimmering.
- 3Add garlic and ginger, stirring for about 30 seconds until fragrant.
- 4Add harder vegetables first (carrots and broccoli), stir-fry for 3-4 minutes until beginning to soften.
- 5Add remaining vegetables (bell pepper, snap peas, mushrooms) and stir-fry for another 3-4 minutes.
- 6Pour in the soy sauce, sesame oil, and cornstarch slurry, tossing vegetables until sauce thickens and coats evenly, about 1-2 minutes.
- 7Serve immediately over steamed rice or noodles.
