Coconut Macaroons

Ingredients
- •14 oz sweetened shredded coconut
- •1 can (14 oz) sweetened condensed milk
- •1 teaspoon vanilla extract
- •1/4 teaspoon salt
- •6 oz semi-sweet chocolate chips
- •1 tablespoon coconut oil or butter
Directions
- 1Preheat oven to 325°F and line a baking sheet with parchment paper.
- 2Mix shredded coconut, sweetened condensed milk, vanilla extract, and salt in a large bowl until well combined.
- 3Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
- 4Bake for 12-15 minutes until the edges are golden brown.
- 5Allow macaroons to cool completely on the baking sheet.
- 6Melt chocolate chips with coconut oil in a microwave or double boiler, stirring until smooth.
- 7Dip the bottom of each cooled macaroon into the melted chocolate and place on a clean parchment sheet to set.
