Coconut Macaroons

Ingredients

  • 14 oz sweetened shredded coconut
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 oz semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter

Directions

  1. 1Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. 2Mix shredded coconut, sweetened condensed milk, vanilla extract, and salt in a large bowl until well combined.
  3. 3Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  4. 4Bake for 12-15 minutes until the edges are golden brown.
  5. 5Allow macaroons to cool completely on the baking sheet.
  6. 6Melt chocolate chips with coconut oil in a microwave or double boiler, stirring until smooth.
  7. 7Dip the bottom of each cooled macaroon into the melted chocolate and place on a clean parchment sheet to set.
