Coffee Mousse

Ingredients
- •1 cup heavy cream
- •3 tablespoons instant coffee powder
- •3 tablespoons hot water
- •3 egg yolks
- •1/4 cup granulated sugar
- •1 teaspoon vanilla extract
- •2 egg whites
- •pinch salt
Directions
- 1Dissolve instant coffee powder in hot water and let cool to room temperature.
- 2Whip heavy cream until stiff peaks form, then set aside in the refrigerator.
- 3Whisk egg yolks with sugar until pale and thick, then stir in cooled coffee and vanilla extract.
- 4In a separate bowl, beat egg whites with salt until stiff peaks form.
- 5Gently fold the whipped cream into the coffee mixture until combined.
- 6Carefully fold in the egg whites in two batches until no white streaks remain.
- 7Divide mousse into serving glasses and refrigerate for at least 2 hours before serving.
