Coffee Mousse

Ingredients

  • 1 cup heavy cream
  • 3 tablespoons instant coffee powder
  • 3 tablespoons hot water
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • pinch salt

Directions

  1. 1Dissolve instant coffee powder in hot water and let cool to room temperature.
  2. 2Whip heavy cream until stiff peaks form, then set aside in the refrigerator.
  3. 3Whisk egg yolks with sugar until pale and thick, then stir in cooled coffee and vanilla extract.
  4. 4In a separate bowl, beat egg whites with salt until stiff peaks form.
  5. 5Gently fold the whipped cream into the coffee mixture until combined.
  6. 6Carefully fold in the egg whites in two batches until no white streaks remain.
  7. 7Divide mousse into serving glasses and refrigerate for at least 2 hours before serving.
