Fragrant broken rice topped with crispy shallots, herbs, and savory Vietnamese sides.

Ingredients

  • 2 cups broken rice
  • 3 cups water
  • 4 shallots, thinly sliced
  • 1/3 cup vegetable oil
  • 2 eggs
  • 6 oz grilled pork chop or Vietnamese sausage, sliced
  • 1 cup shredded cucumber
  • 1/2 cup fresh cilantro and dill, chopped
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 2 cloves garlic, minced

Directions

  1. 1Cook broken rice in boiling water for 15 minutes until tender, then drain and set aside.
  2. 2Heat oil in a pan and fry sliced shallots until golden and crispy, about 5 minutes; remove and drain on paper towels.
  3. 3In the same pan, cook eggs sunny-side up or scrambled, and set aside.
  4. 4Warm the grilled meat in the pan for 2-3 minutes.
  5. 5Mix fish sauce, lime juice, sugar, and minced garlic in a small bowl to make the dipping sauce.
  6. 6Divide cooked rice into two bowls and top each with crispy shallots, fried egg, and warm meat.
  7. 7Arrange fresh cucumber, cilantro, and dill on the side of each bowl.
  8. 8Serve with the fish sauce dipping sauce on the side.
