Fragrant broken rice topped with crispy shallots, herbs, and savory Vietnamese sides.

Ingredients
- •2 cups broken rice
- •3 cups water
- •4 shallots, thinly sliced
- •1/3 cup vegetable oil
- •2 eggs
- •6 oz grilled pork chop or Vietnamese sausage, sliced
- •1 cup shredded cucumber
- •1/2 cup fresh cilantro and dill, chopped
- •3 tablespoons fish sauce
- •2 tablespoons lime juice
- •1 tablespoon sugar
- •2 cloves garlic, minced
Directions
- 1Cook broken rice in boiling water for 15 minutes until tender, then drain and set aside.
- 2Heat oil in a pan and fry sliced shallots until golden and crispy, about 5 minutes; remove and drain on paper towels.
- 3In the same pan, cook eggs sunny-side up or scrambled, and set aside.
- 4Warm the grilled meat in the pan for 2-3 minutes.
- 5Mix fish sauce, lime juice, sugar, and minced garlic in a small bowl to make the dipping sauce.
- 6Divide cooked rice into two bowls and top each with crispy shallots, fried egg, and warm meat.
- 7Arrange fresh cucumber, cilantro, and dill on the side of each bowl.
- 8Serve with the fish sauce dipping sauce on the side.
